You can try adding more maltodextrin stabilizer after the electrolysis.  The particles are gradually agglomerating.

and now after almost a week it's not even pink, it's turned into light purple. what's happening to my colloidal gold?

The particles are unstable, agglomerating, and falling out of suspension.
